Pad ka pao (spicy beef with beans)


 
Ingredients
  • 5 cloves of garlic
  • birds eye chilly chilli (up to your taste)
  • 2 tablespoons oil
  • minced beef
  • 2 table spoon soy sauce
  • 1 table spoon oyster sauce
  • pad kra pao spices sachet(if you have it)
  • green beans or any type of green beans
 
  • Water
  • 1 Egg 
  • Thai holy basil if you do not have the sachet
 
 
Preparation

  • Pound together the garlic and chilli into a paste
  • In a bowl mix together(minced beef,2 tablespoons of soy sauce, 1 tablespoon of oyster sauce).
  • Depending on the type of green beans you bought, use the knife to remove the fibrous part of the broad beans(hard part). 

Method
  1. Heat up 2 tablespoons of oil in the pan
  2. Add the garlic and chilli paste(move it around until it is slightly yellow)
  3. Add the minced that you have marinated. move it around until meat is no longer red.
  4. Add the veg(green beans and Thai holy basil)
  5. Taste, it should taste slightly spicy, a little bit too salty as you would be having it with fried egg and rice.
Tip:
  • If it is too dry add a little bit of water or oil at the end.
  • When frying an egg, the oil should be really hot and egg at room temperature. Don't move it around just use a spoon to scoop the hot oil over the yoke and you will get crispy whites and runny yoke.
  • If it isn't salty enough add more oyster or soy sauce.
  • You can use any other type of meat and veg e.g. chicken pieces, minced pork, seafood or a vegetarian one.

Steak marinade

Ingredients

  • 2 cloves of Garlic
  • Olive oil
  • Pepper
  • Herb mix
  • Soy sauce
  • Oyster sauce
  • Butter

Tips 

  • place the steak in a container/bowl. I always use a cereal bowl. When you place the meat in the bowl: the marinade covers all the meat in a small space, which speeds up the marinating process. 
  • Garlic should be finely chopped or pounded
  • pan should be very hot (oil as well)
  • remember to press on the fat(if you like crispy fat)

Method

  1.  In a bowl mix together (2 cloves of crushed Garlic, cover meat with Olive oil, Pepper, Herb mix, 2 tablespoon Soy sauce, 2 tablespoon Oyster sauce
  2. Olive oil in hot pan (about 2  tablespoons depending on the size of the steak)
  3. place the steak and leave it for 1 minute
  4. flip the steak then add some butter and if you like garlic, rub garlic on the steak
  5. keep flipping repeatedly after one minute(from now do not add butter or garlic)
  6. use a sharp knife and cut into the thickest part of the steak to check if its to your liking
  7. don't forget to only press on the fat(crispy)
